What is the advantage of serving wedding cake as the dessert at my reception?
There are numerous beautiful and delicious desserts to choose from, but a wedding offers the unique opportunity to present a central icon – the wedding cake. I like the symbolism of serving your friends and family from one cake; to me it represents the unity of not only the bride and groom, but of both your clans gathered to acknowledge, support, and celebrate your marriage.
What is an entremet cake?
An entremet cake is a European style dessert cake also known as a torte. It is made with sponge cake, layered with a variety of creams, custards, and mousses. Entremets are made with close attention paid to the layering of texture and flavor, making these desserts as delightful to look at as they are delicious.
How did you create the designs on your cakes, it doesn’t look like icing or fondant?
I use a jaconde, which is a decorative exterior sponge, for my wedding cake designs. The traditional form and clean lines are beautiful. Unlike frosting, your design is not applied to the cake but baked into the exterior sponge for a smooth and thoroughly unique looking finish.
Can we have our entremet cake outside at our summer reception?
Entremets are essentially mousse cakes and should be kept in the refrigerator until about one hour before they are served.
How far in advance should I book my wedding?
A minimum of 6 weeks is required though we will always try to accommodate your request.
Will we be able to keep the top tier of the cake for our first anniversary?
Yes, it will keep for one year if wrapped tightly and kept in the freezer.
